"Go Out and Play" Peanut-Butter Stew

This hearty, healthy and absolutely delicious stew brings in a classic childhood staple -peanut butter- with an Asian-inspired twist. This meal has has a healthy serving of fat and protein, is mineralizing for the body, fires up metabolism and is a great way to incorporate all the veggies you have at the house.

You will also need a kitchen tool that I highly reccomend if you do not have one already- a slow-cooker or crock pot. You can also get a pressure cooker instead, which oftentimes will also have a slow-cooker setting. You simply gather all your ingredients, prep and place in the cooker and that's it. A healthy, home-cooked meal where something else is doing the work- just like when we were kids ūüôā Use the free time to go out and play, catch up on rest, or any of the suggestions above.

1 pound organic chicken thighs or 1 package organic tempeh

1 large bunch collard greens, diced into slivers

1 cup broccoli, chopped

3 large carrots, chopped

1 sweet potato, chopped

1 bunch of asparagus, chopped

1 onion, chopped

1-2 cups water or broth

1 large nub of fresh ginger, peeled and shredded

3-4 tablespoons of organic peanutbutter

Hearty dash of soy sauce or umi plum vinegar

1. If using the chicken, wash and pat dry.  Add to bottom of crock pot on  top of chopped onion.  Add in sweet potatoes, broccoli, carrots, and the liquid. If using tempeh, do not place in yet. Turn pot onto the high setting.
2. After about 90 minutes, check on status of chicken. If you are not adding checking, put in the tempeh. Add in collards, asparagus, ginger and peanutbutter, and stir well.
3.Cook another 90 minutes. If chicken is tender and cooked the strew is ready. Add more peanutbutter and ginger if desired, as well as the soy sauce or umi plum vinegar.
