Alee's Healing Recipe: Cheesy Squash Noodles

Comforting, playful, and healing! This nourishing and decadently tasty recipe benefits digestive health and gut function, enhances the quality of your skin and bones, and improves cardiovascular health. It's a great choice for vegetarians as it offers a nice serving of B12 and protein. In addition the bright orange color revitalizes your second chakra energy center: this is where we store the energy of creativity, decision-making, sexuality and the flow of prosperity. This dish transports well and is great for a picnic, pot-luck or a cozy night on the couch.

Cheese Sauce:
1 medium sized butternut squash
2 tablespoons oil or butter
1/4 cup nutritional yeast
Hearty shake of tumeric powder
Hearty shake of sea salt
1/2 cup of shredded organic cheddar cheese or cheddar cheese substitute of your choice

Noodle options include:
1/2 package of gluten-free or regular pasta of choice
1 large zucchini, spiralized
1 package of kelp or tofu noodles

Add-Ins could Include:
Green peas, spinach broccoli, shrimp, hemp seeds, or other protein of choice.

Tools Needed: 
Good quality blender
Sauce pan
Pot if making pasta
Wooden Spoon
Cutting board
Vegetable peeler
Your favorite serving bowls

Directions:

1. Take the squash and either poke holes in it or peel. Bake at 425 degrees for about an hour or until soft.
2. If not already peeled, peel skin off of squash. Cut in half and scoop out orange pulp and seeds. Seeds can be roasted for a delicious snack!
3. Add cooked squash and other cheese sauce ingredients (other than the actual shredded cheese) to a blender and blend until creamy. Add some liquid if needed and blend until desired consistency.
4. Prepare pasta or substitute noodles according to package directions or spiralize zucchini.
5. After draining noodles add to bowl and fold in the cheese sauce. Top with shredded cheese- if the ingredients are still warm the cheese should melt pleasantly.
6. Add additional veggies and proteins if desired.
